Peasant Bread

Peasant bread is simple bread from a much simpler time. It has a very crisp crust and soft center. I love this recipe because it can be made and baked with rising only once. The dough can also be made and kept as long as it is used within a week. 

  • 1 cup warm water
  • 1 cup unbleached flour
  • 1 3/4 cup whole wheat flour
  • 2 TBSP dry milk
  •  2 TBSP sugar
  • 2 TBSP olive oil
  • 1 1/2 tsp yeast

Preheat oven to 350 degrees. Add yeast to water. Let sit until it foams. Then in a large bowl add flour, milk, sugar, and olive oil. Stir well. Allow to rise in a warm place for about an hour and a half. Then on a cookie sheet form into a circle. Cut in an X pattern. Add seeds if desired. and flour on top. Bake at 350 degrees until golden brown.
