Vegan Baked Oatmeal in Apple Cups






INGREDIENTS:
  • 4-5 Apples
  • 1 1/2 Cups Oatmeal
  • Brown Sugar or Maple Syrup to taste (I used 1/2 cup)
  • 2 Tbsp Vegan Butter
  • 3/4 cup warm water
  • 1 tbsp Cinnamon 
  • 1/8 tsp Nutmeg


DIRECTIONS:
Preheat oven to 350 degrees. Wash apples and cut tops off with a paring knife. Using a potato peeler or spoon core and create a bowl as desired.  In a separate mixing bowl melt vegan butter.  Add oatmeal, sugar/maple syrup, cinnamon, and nutmeg. Add water and stir until oatmeal becomes moist. Spoon mixture into apples. Place apples in a baking dish. Heat for 30-45 minutes or until apples become soft. 

This warm breakfast makes the whole house fill with the yummy smells of autumn! You can also substitute other grains in the recipe like brown rice, barley, or steel cut oatmeal that has been soaked overnight. Very yummy!
